I've owned this cooker for a little more than a week now, and have cooked with it several times (two pot roasts and one Neapolitan ragu currently in progress). Before buying this, my usual method of cooking pot roast was to let it simmer for 12-18 hours, adding liquid as required to prevent burning. My technique with this cooker is to, per directions, bring the contents to a boil for a few minutes and then place it in the cooker. Because I tend to use extremely long cooking times, every six to eight hours I remove it from the cooker, bring it back to a boil, and put it back in. The good: the pot roasts I've made with it have come out just as good as with normal cooking, but with well under two hours each of total direct heating. Even considering that I use a higher heat, that's ten to sixteen hours or more of heating that I've avoided. The bad: at least for pot roast, the meat takes much longer to become fully tender. I tried some at 16 hours; it was fully cooked, but still tough. At about 30 hours it was perfect. Recipes without large, solid ingredients, or that don't rely on long cooking for tenderization, may not suffer from this lengthening of cooking time. In summary, people looking to cook tender pieces of very large meat in under a day will probably be disappointed, but if you're willing to plan a meal two days in advance and do some easy reheating, I recommend this cooker wholeheartedly.
